Summer Veggie Power Bowl

I would like to lead by telling you this is not an “easy” veggie bowl, it takes time and patience considering all the wonderful ingredients and flavors it packs. It’s worth the wait and the veggies can be prepped ahead of time if you want to break up the prep time, serve it quickly for a meal or take to work.

(Serves 4)

INGREDIENTS

  • 2 cups of broccoli

  • 4 cups of water

  • 2 cups of chopped sweet potatoe

  • 1 can of sweet corn

  • 1 can of black beans

  • ½ cup uncooked quinoa

  • 1 cup of water

  • 1 cup of fresh chopped mushrooms

  • 3 cups of fresh chopped kale

  • Micro beet greens for serving (any micro greens will work)

  • 1 cup of chopped cherry tomatoes

  • ½ cup chopped onions

  • 3 cloves of chopped garlic

  • ½ cup dried wakame seaweed

  • 1 cup of water

  • 2 tablespoons of toasted sesame oil

  • ½ tsp of garlic powder

  • 1 tbsp of soy sauce

  • ½ tsp of ginger powder

  • Olive oil

  • 1 lemon

  • 1 tbsp cumin

  • 1 tbsp basil

  • 1 tbsp paprika

  • 1 tbsp brown sugar

  • Pink Himalayan sea salt

  • Freshly grated black pepper

  • 1 radish for serving

 

DIRECTIONS

 To prepare roasted sweet potatoes 

 1.) Preheat oven to 180 Celsius

2.) Mix sweet potatoes with 2 tbsp of olive oil, 2 tsp of pink salt, 1 tsp of black pepper

3.) Bake until tender, 30 mins.

To prepare broccoli 

1.) Add 4 cups of water to pan and bring to boil 

2.) Add 2 cups of broccoli and cook for 15-20 minutes., until its tender

To prepare black beans and corn:

1.) Heat pan with 3 tbsp of olive oil and add chopped garlic and onion for 2-3 minutes. 

2.) Add corn, black beans, lemon, cumin, basil, paprika and brown sugar. 

To prepare quinoa 

1.) Bring 1 cup of water to boil and add quinoa. 

2.) Boil for 25-30 minutes until water is evaporated and quinoa is “fluffy.”

To prepare kale

1.) Heat pan with 1 tsp of olive oil and add chopped kale

2.) Sprinkle with pink salt and black pepper

To prepare mushrooms 

1.) Heat pan with 1 tsp of olive oil and chopped mushrooms

2.) Sprinkle with pink salt and black pepper 

To prepare wakame 

1.)  Bring 1 cup of water to boil and add to dried wakame and keep aside for 10-15 minutes. 

2.) Drain wakame and allow to cool for 5 minutes

3.) Add toasted sesame oil, garlic powder, soy sauce and ginger powder to wakame

To prepare bowl: 

This is the fun part. With all your prepared ingredients layer to your hearts content. Either use all the options or omit a few and serve. 

*I like to serve this with a Golden Turmeric Tahini Dressing
